Banana Rice Pudding


·1 cup sugar ·2 cups water, plus 1 tablespoon ·1 cup basmati rice ·1 ripe banana ·¼ cup dark brown sugar ·2 teaspoons vanilla ·1 ½ cups half-and-half ·2 large egg yolks ·¼ cup sugar, plus 2 tablespoons ·¼ teaspoon ground cinnamon ·Chilled whipped cream, optional
Preheat oven to 325*F and bring water to a boil that you will later add to the roasting pan. Place cocottes in the roasting pan.
